Why Fresh, Quality Ingredients Make All the Difference

In Mediterranean cooking, the ingredient list is short on purpose. When the olive oil, the produce, and the meat are this good, the kitchen's job is to stay out of their way.
Simple Ingredients, Serious Standards
Dishes like hummus and a Mediterranean salad only work if every component pulls its weight — there's no heavy sauce to hide behind. That's the standard we build every plate to, from the vegetables we chop to the meat we grill.
From the Produce Aisle to Your Plate
Our Avocado Toast ($14) is about as short an ingredient list as a menu gets — avocado, tomatoes, olive oil, and sumac, nothing to distract from any of the four. The Vegetable Couscous ($18) piles fluffy couscous with slow-cooked seasonal vegetables and chickpeas in a North African sauce, and it's fully vegan without anyone having to ask. Our Mediterranean Salad follows the same logic: crisp vegetables, good olive oil, and nothing else getting in the way.
The Halal Standard
Every cut of meat on our menu — beef, lamb, and chicken — is 100% halal and hand-slaughtered. It's not a claim we make lightly; it's a sourcing decision that shapes every plate that leaves our kitchen, from a Combo Shawarma to a rack of Lamb Chops ($21). If seafood is more your pace, our Grilled Salmon ($19.95) and Grilled Tilapia ($19.95) are prepared with the same care.
Built From Scratch
Our mezze isn't opened from a container — it's made here. Hummus & Pita ($6.50) and Baba Ghanoush & Pita ($7.50) are both made in-house, and our Lentil Soup & Pita is simmered fresh with warm spices and herbs. Even our four-piece Falafels ($4.95) are formed and fried to order, not held under a heat lamp waiting for someone to ask.
Where the Spice Comes From
Fresh produce is only half the story. The other half is the North African sauce underneath a Traditional Lamb Couscous, or the cardamom that gives our Arabic Coffee its warmth — spices and specialty ingredients that can't be sourced from a farm down the road. For those, we work with importers who share our standards for quality and authenticity, because a genuine Mediterranean or North African flavor depends as much on what's in the spice jar as what's on the cutting board.
When the ingredients are this good, the kitchen's job is to stay out of their way.
Taste the Difference
You can taste sourcing decisions in a dish before you can explain them — it just tastes brighter, cleaner, more like itself. That's the difference we're chasing in every plate, from a simple hummus to a full Traditional Lamb Couscous ($21).
